Spring is finally here! What a great way to kick off the new season with a cookout! This month we decided to make sesame ginger chicken with brown rice and vegan coconut tapioca pudding. We had one volunteer this month Divya, who was very helpful and everything was done in about three hours.

Each of us worked individually, in that we split the work. I was cutting the vegetables, Ria was cooking the chicken, Divya was making the sauce to put in the chicken, and Neha was making the rice. It took all of us a long time to make the sauce because of the precise measurements! Cooking meals is a fun task that all three of us look forward to every month.

This month we had some fun taste testing our dessert! For dessert we made vegan tapioca pudding with mangos on top. The tapioca pudding ingredients were boiled on the side. Once it cooled down, it was transferred to the trays. We added mangoes on top. Ria and I thought the pudding tasted better with mangoes on top, Neha and Divya thought that the pudding was better by itself. In the end we added mangoes to the pudding because those whom don’t enjoy mangoes may take them off if they wanted to. All in all, this was another successful cookout, and we are looking forward to the next one!
