Mango Tapioca Pudding

If you are looking for a better alternative to dessert, try this mango tapioca pudding! It is a delicious twist on a regular pudding, with fresh mangoes as well. With this recipe, you can have the best dessert at a potluck or just have a delicious snack to enjoy the upcoming summer!

Serves 3-4
Ingredients:
1/3 cup tapioca pearls
1 cup almond milk
1 cup coconut milk
1/3 cup maple syrup
1 tsp pure vanilla extract
1/2 mango, chopped (fresh or frozen)
pinch of salt


Procedure:
Soak the tapioca pearls in the almond milk for an hour. Add the tapioca pearls and the unabsorbed liquid to a large pot, along with the coconut milk, maple syrup, vanilla, and salt. Bring the mixture to a boil on medium heat, stirring occasionally. Reduce the heat and continue to stir the mixture. Once complete, let the pudding cool. Divide the pudding among serving bowls, add the chopped mango, and enjoy!
For Donation - Use small plastic cups to serve.
