Meskouta (Orange Cake)

 

This cake is perfect to spice up a simple afternoon, or to serve at a party! This cake's unique name is Meskouta. It has that inexplicable orange flavor and I added almond extract to give it my own twist. What could be better than that? Add it to my Ali Nazik and Saffron Rice recipes for the perfect dinner. I hope you love this delectable dessert!

Serves 6-10

 

Ingredients:
1/2 cup organic orange juice
Zest of 1 orange
4 eggs
1 cup sugar
1/2 cup vegetable oil
2 cups flour
1/2 tsp salt
1/2 tsp vanilla extract
1/2 tsp almond extract

4 tsp baking powder

Procedure:

Grease a loaf pan with cooking spray and add parchment paper and set it aside.
Beat the eggs and sugar, when thick, gradually add the oil. Add the flour, baking powder, sugar, and salt. Keep the beater at a medium speed. After that, you can add the orange juice. I added almond extract and vanilla extract to give it a nutty flavor. Bake for 45 minutes at 365 degrees until a toothpick comes out clean. Then it's ready to enjoy!
