Huevos Rancheros

Our Huevos Rancheros is a delicious Mexican dish consisting of potatoes, black beans, sausages, salsa, and eggs. If you are a fan of these ingredients, you will love this dish! I hope you enjoy!

 

Serves 4-6
Ingredients:
2 small russet potatoes
2 tbsp oil
1 15.5 oz can black beans
1/2 green bell pepper, cubed

1 1/2 tsp of Trader Joe's taco seasoning
6 large eggs
1 tbsp salt
1/4 tbsp pepper
Cheese to taste
1 batch salsa


 

Procedure:
Prepare our special salsa and set aside. Peel and slice the potatoes into 1/4 inch slices. Toss with 2 tbsp oil, 1 tbsp salt, and 1/2 tbsp pepper. Set aside separate. Open a can of organic black beans and wash and strain. Then add a tablespoon of oil to a skillet and sauté organic beans with the cubed bell peppers. Stir on medium heat until the bell peppers are cooked and you can easily slice it with a dull knife. Add 1 1/2 tsp of taco seasoning. Add 1/2 tbsp salt. Set aside. Pour 1 tbsp vegetable oil into the same pan. Place sausages on the pan, and set to medium heat. Cook until the bottom of the sausage becomes a brownish color, and flip the sausage and cook the other side for half the time. Turn off the heat. Take a 9 by 9 inch cake pan and layer with the potatoes, then the beans, then the sausages, then the salsa. Crack the eggs on top, and sprinkle with cheese. I also sprinkle it with coarse salt and cracked pepper over each egg for taste.Bake at 375°F for 10-15 mins, or until the egg whites look set. Enjoy!
