Polenta and Anaheim Peppers

I remember when I was younger, my favorite aunt had made this dish, and I had instantly fallen in love with it. After you taste this delicious mix, I am sure you will too. It is super easy to make for a large number of people, and just as easy to make for a couple of people. I hope you enjoy!

Ingredients:
For the Polenta-
1 roll polenta from Trader Joes
1 tbsp butter
salt and pepper to taste
For the Anaheim Peppers-
1 tbsp vegetable oil
5-6 anaheim peppers
1 shallot, minced
salt and pepper to taste


Procedure:
Crumble the polenta into small pieces. In a pan on medium heat, add the butter. Once melted, add the crumbled polenta and stir until evenly warmed. Add salt and pepper to taste. Remove the seeds of the anaheim peppers and dice. Make sure to wear gloves to protect your hands. In a pan on medium heat, add the oil and wait until hot. Add the minced shallot and cook until browned. Add the anaheim peppers and cook until soft. Add salt and pepper to taste. When serving, put a layer of polenta on the dish, and add the anaheim mix on top. Enjoy this delicious dish!
