Plum Torte

Since it's getting colder in Seattle, I thought it was time to introduce a more seasonal recipe for this month. Plum tortes are perfect for fall, and a touch of pumpkin pie spice makes it even more perfect. This dessert is absolutely delicious and I hope you enjoy it!

Ingredients:

12 prune plums
1 stick butter, softened
3/4 cup sugar
1 cup all-purpose flour
1 tsp baking powder
2 eggs
2 tbsp brown sugar
1 lemon
1 tsp pumpkin pie spice


Procedure:
In a stand mixer/ large bowl, cream the butter and sugar. Add in 1 egg at a time and mix. Add in the flour in 2-3 batches, and add in the baking powder. Transfer into a baking pan. In a small bowl, mix together the brown sugar, the juice of the lemon, and the pumpkin pie spice. Slice each plum into 4 slices. Dip each plum slice into the sugar/lemon mixture and place on top of the batter. Once complete, bake at 350° for 40-50 minutes. Once finished baking, you can serve!
