Peanut Noodle Salad
This salad is a simple but delicious one. Though it has noodles in it, the coleslaw balances it out and the sauce is absolutely amazing. It is not too spicy but it still has a lot of flavor. I hope you enjoy it!
Ingredients:
4 squares brown rice noodles, boiled
1 small packet of shredded cabbage slaw
1/2 cup peanut butter
1/4 cup soy sauce
1/4 cup water
1 tbsp maple syrup
1 tbsp ginger
1 tbsp chili garlic paste
1 1/2 tbsp rice wine vinegar
1 tsp white wine vinegar
1 tsp sesame oil
For the topping (optional):
1/2 cup crushed peanuts
1/2 tbsp lime juice
2 tbsp chopped cilantro
Procedure:
In a bowl, add the peanut butter, soy sauce, maple syrup, ginger, chili garlic paste, rice wine vinegar, white wine vinegar, and sesame oil. Use a hand blender to incorporate everything, and slowly add in the water. In a large salad bowl, add the noodles, cabbage slaw, and the sauce. Mix everything together until the noodles are equally coated in the sauce.
If you would like, you can make the topping for the salad. Mix together the crushed peanuts, lime juice, and cilantro in a small bowl. Sprinkle on top of the salad and you are done! I hope you enjoy!
