Cranberry Apple Cake

If you are ever in the mood for a cake that represents the holidays, this recipe is for you! With the cranberries and the apples, each bite will remind you of the holidays. This is perfect for a small get-together with friends and family, and it is absolutely delicious. I hope you enjoy this recipe!

Ingredients:
12 oz. fresh cranberries
1 green apple peeled, cored, and diced
1/2 cup light brown sugar
1 tbsp orange zest
1/4 cup orange juice
2 large eggs, room temperature
1 cup sugar
1 stick melted butter
1 tsp vanilla extract
1/4 cup sour cream
1 cup all-purpose flour
Procedure:
Preheat an oven to 350° F. In a large bowl, mix together the cranberries, apples, brown sugar, orange zest, and orange juice until the fruits are coated. Set aside. In a stand mixer, beat the eggs for 1-2 minutes. Then add the sugar and mix until incorporated, and add the butter, and mix again. Next, add in the sour cream and vanilla extract and mix until there are no more sour cream chunks. Then, slowly add the cup of flour to the batter. Grease the baking pan and add in the fruit, making sure not to add the excess liquid. Then, pour the batter on top of the fruit and spread it until the fruit is covered. Bake for 50 minutes or until a toothpick comes out clean. Then, let the cake cool, and it is ready to be eaten! I hope you enjoy this recipe!
