Chickpea Salad Sandwiches

These chickpea salad sandwiches are a delicious but vegetarian version of our chicken salad sandwiches! They are perfect for taking on a picnic on a summer day, or just about any occasion. This sandwich is absolutely amazing, and delicious during summer. I hope you enjoy these!

Ingredients:
1 14oz can of chickpeas
2 small packets of coleslaw
1 stick celery
1 cup cranberries
4-5 tbsp mayo
1-2 tsp mustard
8 slider buns
8 lettuce leaves
salt and pepper to taste


Procedure:
Wash and drain the chickpeas. Transfer to a microwave-safe bowl and add one cup of water. Chop the celery into small, fine pieces. Microwave for 4 minutes. In a large bowl, add the chickpeas, coleslaw, celery, cranberries, 4 tbsp mayo, and 1 tsp mustard. Mix together until incorporated. If the salad is too dry, add more mayo. To assemble the sandwiches, take one slider bun and spread mayo on the bottom bun and mustard on the top bun. Take the lettuce leaf and cut it in half, and place both leaves on the bottom bun. Add around 1/8th of the salad mix on top of the lettuce and cover with the top bun. Repeat with the rest of the sandwiches and there you have chickpea salad sandwiches!
