Chicken Banh Mi

Banh mis are a delicious Vietnamese sandwich that is very popular in Seattle. I think it is one of my favorite sandwiches I have ever eaten. It is super simple today, and you can easily make it with either tofu or chicken, which can make it vegetarian. I hope you enjoy!

Ingredients:
For the vegetable pickle:
2 carrots
1 small bag of radishes
1 jalapeño
1 cucumber
1/4 cup white wine vinegar
1/4 cup rice wine vinegar
pinch of sugar
pinch of salt
For the chicken:
4 pieces of chicken
2 tbsp olive oil
2 tbsp soy sauce
pinch of salt
pinch of pepper
For the sandwiches:
1 baguette from Safeway's fresh bake section
3 tbsp mayo
1 tsp sriracha


Procedure:
Chop all the vegetables into pieces and slice the jalapeños. Add the vegetables to the bowl along with the white wine vinegar, rice wine vinegar, salt, and sugar. Let the vegetables marinate for at least 30 minutes. Marinate the chicken in the soy sauce and olive oil for around 30 minutes. Once ready, drizzle a little oil on the pan and set to medium heat. Once hot, add in the chicken and pan-fry for 3 to 4 minutes per side. Cut the baguette in half lengthwise, and cut into 4 pieces. In a small bowl, mix together the mayo and sriracha until it is fully incorporated. To assemble the sandwiches, spread the mayo both sides of the sandwich. Add some vegetables to the sandwich as the first layer and put a piece of chicken on top of that. Cover with the top of the sandwich and serve fresh! I hope you enjoy!
