Chicken and Cheese Quesadillas

The first time I ate these quesadillas were at my aunt's place, while we were busy preparing a big Thanksgiving dinner. They were the most delicious quesadillas that I had ever eaten, and they are still number one on my list of Mexican food. This is perfect for any occasion; as a quick snack or a family brunch. I hope you enjoy this recipe as much as I did!

Serves 4-5

Ingredients:

1 pound cooked chicken strips
2 tbsp taco seasoning
1 tbsp cumin
1 1/2 small onions, sliced
1 green bell pepper, sliced
4 tbsp vegetable oil
10 tortillas
Mexican shredded blend cheese 
Salt to taste

Procedure:

Heat up a skillet with 2 tbsp vegetable oil. Add the onions and saute until they are yellow. Add the bell peppers and sauté until cooked. Add 1 tbsp taco seasoning and 1/2 tbsp cumin and salt to taste. Then remove the skillet from heat and add the vegetables into a big pan. In the skillet, add the remaining 2 tbsp of oil to the pan. Take the cooked chicken strips and add to the pan along with the rest of the taco seasoning and cumin. If your chicken already contains salt, make sure not to add salt, but if not, add salt to taste. Add to the pan with the vegetables. Heat up a tortilla and fill with the chicken and vegetables along with some shredded Mexican cheese. Now, the cheese and chicken quesadillas are ready to be served!
