Biscotti

If you are ever looking for a dessert that will wow a crowd, this recipe is for you. It takes a few extra hours to prepare, but it is worth it. This biscotti is perfect to enjoy with a cup of tea or coffee, or plain! This recipe is also completely customizable, and I find it fun to experiment with different mix-ins.

Serves 36-38
Ingredients:
10 tbsp butter
1 cup sugar
1 tsp vanilla extract
3 eggs
3.5 cups flour
1 tbsp baking powder
pinch of salt

Mix-ins:
1 cup white chocolate chips
1 cup craisins


Procedure:
Sift the flour and baking powder and set aside. In a stand mixer, cream the butter and sugar together. Add each egg one at a time and mix in between. Add in the flour 1/2 cup at a time and add in the salt and the vanilla extract. If the dough is too sticky, then add in more flour until it doesn’t stick to fingers a lot. Now, add the mix-ins. Form the dough into 3 even logs and bake until golden brown (around 40 minutes) at 350 degrees. Let cool completely, preferably for a few hours to overnight, and slice the logs into 1-inch slices for biscotti. bake one more time for 10-15 minutes at 350 degrees and they’re ready!
