Summer Pasta Salad:

It's finally summer! This quick and delicious pasta salad is perfect for any picnic, dinner party, or just a quick lunch! It is super simple to make and it will be ready in less than 15 minutes! I hope you enjoy this recipe as much as I do!

Ingredients:
For the pasta salad-
1 lb dry pasta of your choice
2 large green bell peppers
1 small box cherry tomatoes
1 small container herb-marinated mozzarella balls (from Trader Joe's)

 

 

 

 

 

 

For the home-made dressing-
1 cup olive oil
2 tbsp balsamic vinegar
2 tsp organic honey
3 tsp herb du Provence (from Trader Joe's)
salt and pepper to taste

 


Procedure:
Follow the instructions on the packaging to cook your pasta. Once cooked, drain and leave to cool. Chop the bell peppers into small pieces, and add to the bowl with the pasta. Chop the cherry tomatoes into quarters and add to the bowl. Take the mozzarella balls and chop into quarters, and add to the bowl. In a separate bowl, mix together the olive oil, balsamic vinegar, honey, herb du Provence, salt, and pepper. Mix well until the honey is fully incorporated with everything else. Pour the dressing over top the salad and mix well. There you have it, a delicious and healthy pasta salad!
