We served this sauce with spaghetti and turkey meat balls at the shelter.

Ingredients:

2 carrots
1 celery stalk
1/4 onion
1 bay leaf
1 tsp olive oil
1 lb ground beef
1 large san Marzano tomato can
1/2 cup red wine

Salt to taste

Procedure:

In a food processor, grind up the carrots, celery, and onion until it is thoroughly ground. Add the mixture to a pan with the olive oil and the bay leaf. This mixture is known as sofrito. In a separate pan, add the ground beef and cook. Make sure to break the beef down into small bites and to cook all the beef until it is brown. In a separate bowl, use a food mill or a sieve to pulverize the tomatoes. When the sofrito is cooked, add the beef, tomato sauce, and red wine. Cover this with a lid and let it simmer until the red wine evaporates.
