Asian Noodle Salad

 

This is a delicious salad that my mom makes for us every summer. Try this recipe and pair it with any Asian dinner!

 

Serves 4-6

Ingredients:

2 original flavored ramen noodle packets
1 cup blanched slivered almonds
2 cups sunflower seeds
2 tsp sesame seeds
1 packet Asian coleslaw
1 cup scallions
1 stick melted butter
Dressing:
3/4 cup vegetable oil
1/4 cup white wine vinegar
2 tsp soy sauce

 

 

Procedure:

Crush the ramen noodles coarsely by hand. Warm the butter in a pan and add the crushed ramen noodles and toast it until brown. When the ramen noodles are hot, add the slivered almonds, sunflower seeds, and the sesame seeds. When ramen noodles are crispy, turn off the heat.
For the dressing, you need to take the sugar, white wine vinegar, and oil and put it in a saucepan. When the sugar is dissolved, take it off the heat and let it cool. 
Mix the coleslaw with the ramen noodles and add the dressing, drizzle it with soy sauce, and salt. Keep it in a fridge and then serve it cold. This makes a yummy side dish with any Asian dishes!

(Optional: Saute 2 pounds of cooked chicken in soy sauce and sesame oil to add a delicious touch to your salad!)
